Ingredients

- 1 pound chicken livers
- 2 tablespoons unbleached all-purpose flour
- 5 tablespoons olive oil
- 2 cloves garlic, peeled and minced
- 1 large onion, diced
- 2 tablespoons tomato paste
- 2 tablespoons butter
- 2 tablespoons Worcestershire sauce
- 2 tablespoons white wine vinegar
- Salt and pepper to taste
- 2 tablespoons chopped fresh parsley
- Cooked mashed potatoes, for serving

Instructions

1. Rinse the chicken livers in cold water and pat dry with paper towels. Coat the livers with the flour and set aside.

2. Heat the olive oil in a non-stick skillet over medium-high heat. Add the chicken livers and cook until golden brown and crispy on both sides, about 5 minutes. Remove the livers from the skillet and set aside.

3. Add the garlic and onion to the skillet and cook until softened and lightly browned, about 5 minutes. Add the tomato paste and cook for an additional 2 minutes.

4. Add the butter, Worcestershire sauce and white wine vinegar to the skillet. Increase the heat and cook until the sauce thickens, about 5 minutes. Return the chicken livers to the skillet and toss to coat in the sauce. Reduce the heat and simmer until the livers are cooked through, about 10 minutes.

5. Season the livers with salt and pepper to taste, and sprinkle with the fresh parsley.

6. Serve the livers with mashed potatoes and a little extra sauce, if desired.
